Za-atar Salad

The Za'atar Salad, is a tantalising blend of vibrant ingredients and exotic spices that will transport your taste buds to the sun-soaked lands of the Mediterranean. Imagine juicy chunks of ripe tomatoes and crisp cucumber, mingling with thinly sliced red onions, all kissed with the aromatic allure of nigella seeds. Whether you're craving the creamy richness of feta or the irresistible bite of toasted halloumi, this salad offers a symphony of textures. And let's not forget the fragrant mint leaves, finely chopped to infuse each bite with a refreshing burst of flavour.

INGREDIENTS

SALAD:

5 Medium Tomatoes, chopped into chunks

¾ Cucumber, chopped into chunks

½ Medium Red Onion, thinly sliced 

1 Tsp Nigella Seeds

Feta, broken into chunks or toasted Halloumi, sliced

Small bunch of mint leaves, finely chopped

DRESSING:

1 Tbsp Wine Vinegar

3 Tbsp Coconut Aminos or Tamari - or both, mixed 

½ Garlic clove, crushed

¼ Tsp Sugar, unbleached

¼ Tsp Sea Salt

2mm Fresh root ginger, finely grated

3 Tbsp Za’atar 

6 Tbsp Olive Oil

½ Lime zest and juice 

Salt & Pepper

METHOD:

  1. Make the dressing - Mix all the ingredients in a bowl and whisk to dissolve sugar and salt. Mix well and season to taste

  2. Halloumi - toast slices in a dry frying pan. If using Feta, break into rough chunks

  3. Salad - Add tomatoes, cucumber & red onion to a large bowl and mix

  4. Stir dressing through salad, mix well

  5. Add chopped mint to the salad and mix through

  6. Add Feta or Halloumi to the salad

  7. Sprinkle with Nigella Seeds
