Wild Garlic & Basil Pesto

INGREDIENTS

Large bunch of Wild Garlic

Medium bunch of Basil

70g Pine nuts or Walnuts

70g Parmesan, grated

1/2 a Lemon, juiced

160ml Olive Oil

METHOD:

  1. Blitz all the ingredients, except the olive oil, in a blender for 1-2 mins

  2. Slowly stir in the olive oil

  3. Blitz again until smooth

  4. Season to taste

  5. Store in an airtight container in the fridge for 4-5 days

Can be frozen in ice cube trays for up to 3 months. Defrost before use
