Vegetable Soup

A warm and nourishing vegetable soup, perfect for aligning with your dosha and providing comfort. This soup combines the natural sweetness of seasonal vegetables with the aromatic flavours of cumin, turmeric, and coriander. Topped with fresh coriander leaves, it's a hearty and healthy dish that brings warmth and sustenance to your day. Enjoy it smooth, chunky, or somewhere in between, tailored to your preference.

Serves 4

INGREDIENTS & METHOD:

Seasonal vegetables suited to your dosha type (suggestion: 3 sweet potatoes, 2 onions, 1 butternut squash, ½ cauliflower, 2 parsnips, 3 stalks celery, and 6 carrots)

2 Tbsp ghee

1 litre hot water

1 tsp ground cumin

1 tsp ground turmeric

1 tsp ground coriander

Handful of fresh coriander, finely chopped leaves and stems

Salt and pepper to taste

Peel and roughly chop the onions.

Chop all the vegetables, peeling only if the skins are not good.

Melt the ghee in a large saucepan over medium heat.

Add the onions, stir to coat with ghee, and sweat for a few minutes until they become translucent.

Add all the vegetables, stirring to coat with ghee, and sweat for about 10 minutes.

Add the ground cumin, turmeric, and coriander, stirring to release the flavours.

Pour in the hot water and add the chopped coriander stems.

Season with salt and pepper to taste.

Stir, cover, and simmer gently for approximately 35-40 minutes, until all the vegetables are cooked.

For a silky smooth texture, blend the soup with a blender. For a medium texture, partially blend. For a chunky soup, serve immediately without blending.

Garnish with the chopped coriander leaves and serve warm.
