Stewed Apples

Serves 4
INGREDIENTS & METHOD:
2 Apples (cooking or eating), peeled, cored, and chopped
½ inch grated fresh ginger or ½ teaspoon ground ginger
½ teaspoon cinnamon
2 Medjool dates, apricots, prunes, or a small handful of raisins
OPTIONAL: A handful of toasted sunflower or pumpkin seeds
OPTIONAL: 1 teaspoon coconut oil

Place all the ingredients in a small saucepan and just cover with water.
Place the lid on tightly and bring to simmering point.
Simmer gently for 10-15 minutes, stirring occasionally.
Remove from the heat and serve warm.
If using the optional extras, add the seeds and stir through the coconut oil to melt.
